The Cave, Cabernet Sauvignon-Merlot, 2002: Oak-aged for 20 months, this dark garnet, full-bodied blend of 65% Cabernet Sauvignon and 35% Merlot, shows firm and chewy tannins that yield nicely in the glass to reveal an appealing array of berry, currant, vanilla and dusty herbal aromas and flavors. Elegant and generous, the best ever from the Cave and perhaps the best ever from Binyamina. Best now-2008. Score 90. K. (Tasted twice with consistent notes 11 and 12 Oct 2005) The Cave, Cabernet Sauvignon-Merlot, 2001: This moderately-deep garnet, well balanced, medium- to full-bodied red was oak-aged for 18 months. Continuing to show tempting aromas and flavors of currants, plums and berries, those with overlays of coffee, Mediterranean herbs and spicy oak. Drink now–2007. Score 88. K (Re-tasted twice with consistent notes 11 and 12 Oct 2005) Also tasted – barrel samplings of the 2003 Merlot and Cabernet Sauvignon that will be used in the blend of the 2003 Cave blend, the final blend to be made approximately in April 2006). The Merlot, soft, round and generous with plum, berry and spices; the Cabernet with more far firmer tannins, generous spicy and herbal overtones. A potentially excellent blend. |
